Six Sisters 3 Loaves of One Hour Bread



Ingredients:

1 Tablespoon yeast
1 Teaspoon sugar
1/4 cup water

7-9 cups flour half wheat and half white
1/2 Tablespoon of gluten with each cup of flour
3 cups of warm water 110 degrees F
1 Tablespoon white vinegar (the vinegar and potato flakes make a dough enhancer)
6 Tablespoons potato flakes
1/3 cup of canola oil
1/3 cup honey
1 Tablespoon salt

INSTRUCTIONS
  1. Proof the yeast first by putting 1/4 cup of warm water with 1 tsp sugar and 1 TBS yeast.  Let it sit fro 5-10 minutes and it should grow and foam up double it make sure the yeast is active.  
  2. With dough hook in place on your mixer, place water, vinegar, potato flakes, gluten, oil, honey, yeast, and 3 cups flour in the bowl. On the Bosch mixer, flip the switch over to "M" to incorporate.
  3. Add another 4-5 cups of flour and salt and turn the speed on the mixer to "1".
  4. Continue adding flour if sticky until dough cleans the edges of the bowl (takes just a minute or two).
  5. Continue kneading dough on speed "2" for another 6-8 minutes.
  6. Oil your hands and lightly oil a spot on a clean surface. Divide the dough into three equal portions and shape into loaves.
  7. Put loaves into greased pans and let rise until double in size (about 20 minutes).
  8. Bake at 350 degrees for 30-40 minutes (internal temperature should be about 195 degrees and the outside will be nice and golden).
NOTES
*While this recipe can be made without the dough enhancer and gluten, we highly recommend using them for the best results. The dough enhancer will improve the taste, texture and crust of the bread. The gluten allows the bread to rise, giving you perfect loaves. This recipe can be used to make monkey bread, breadsticks, cinnamon rolls, orange rolls, pizza dough, rolls, or you can add other things to the bread such as sesame seeds, oatmeal, cinnamon, raisins- basically anything goes!

For cinnamon swirl I beat an egg with a Tbsp of water and brush on top of the bread dough that is roll into a rectangle. Then sprinkle cinnamon sugar mixture on top and roll into a loaf.
