Coconut Cream Cake

COCONUT CREAM POKE CAKE (+VIDEO) | The Country Cook

Ingredients:
1 pkg white cake mix, pudding in the mix kind if possible
3 eggs, beaten
1/3 c oil
1 cup water
1/2 teaspoon coconut extract
1 cup canned cream of coconut syrup
1 14 ounce can sweetened condensed milk
1 cup whipping cream
1 Tablespoon sugar
1 cup flaked coconut
Fresh strawberries

Instructions:
Combine cake mix, eggs, oil, and water in a bowl, mix well.  Stir in coconut extract.  Pour into a greased 9 X 13 pan.
Bake at 350 degrees for 30 minutes or until done.
Mix coconut syrup and condensed milk in a small bowl.  Pour over hot cake.  (I poke holes first with a knife and then pour syrup over cake).  Let stand until cool - put in fridge and serve cold.
Beat whipping cream with sugar until soft peaks form.  Spread over cake.  Top with flaked coconut.  Serve with strawberries.
